ÁNIMAS
Mezcal Animas is produced at their palenque in San Juan del Rio by master distiller Humberto Juan. They use local agave grown by Rodolfo Juan, who is Humberto’s brother and also a master distiller. They choose mature agave with an average of 8 years, roast them in an underground oven, mash them with a stone tahona, ferment in wooden vats with native yeast, and distill twice in copper. Ancient methods that have changed little over the past many generations.
